Icy Lime Lemon Bread Recipe

Ingredients

6 cups warm water

2 teaspoons lemon juice

2 eggs

2 teaspoons lemon zest

1/2 cup lemon-lime flavored carbonated beverage

1 (8 ounce) package cream cheese, softened

2 cups bread flour

2 cups shredded Cheddar cheese

Directions

Preheat oven to 400 degrees F (200 degrees C). Lightly grease a cookie sheet.

In a medium bowl, mix 2 cups of water, lemon juice, eggs, lemon zest and lemon-lime soda. Mix together and set aside.

While the water mixture is mixing, melt cream cheese in medium-sized saucepan. In a small bowl, blend cream cheese, 2 cups of bread flour and 1 cup of cheese into the creamed mixture. Stir the remaining 1/2 cup of bread flour into the creamed mixture. Spread portions into the prepared cookie sheet, folding into the creamed layers.

Bake in preheated oven until golden brown, about 20 minutes. Remove from oven and allow to cool on a wire rack. While bread remains warm, place sides of bread sheets vertically onto the prepared baking sheet. Spoon lemon mixture over side of bread to prevent sticking. Chill until serving.
