1 (4 ounce) can diced jalapeno peppers, seeded and minced
2 tablespoons vegetable oil
1 onion, sliced in half
8 ounces sausage, sliced into 1 inch cubes
32 hamburger links
28 green onions, sliced into rounds
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a muffin with oil and place on baking sheet.
Trimmed peppers and oil, and place in a large bowl. Stir in beans and onions. Pour mixture and 1 tablespoon of jalapeno pepper mixture into the bottom of each muffin jar. Line the top with hamburger links. Place green onions on the bottom, and the hatches of the caps on the shaking wedge portion of the hot pepper. Place the meat in the jar, seal and shake. Pour enough water to cover the meat.
Bake in preheated oven for 45 minutes. On a mini, place 1 to 2 cups meat mixture and green onions onto each muffin. Spread with tomato sauce if desired.
