Sweet Potato Banana Splurge Recipe

Ingredients

1 pound sweet potato, peeled

1 cup white sugar

1/2 cup butter, melted

1 teaspoon vanilla extract

2 bananas

Directions

Preheat oven to 375 degrees F (190 degrees C). Grease and flour 2 8x4 inch jelly jars.

Place sweet potato in a medium bowl, and mix with sugar, butter, vanilla extract and bananas.

Spread the mixture evenly in the jars.

Bake 15 to 20 minutes in the preheated oven, or until bubbly. Remove from oven and cool completely. Cut into slices.

I followed the recipe exactly making no changes and these were awesome. My husband complained when they were all gone but my poor husband really liked them. My family tried to get a hold of the canned version but they said it didn't whip. My husband grabbed a teaspoon each of fresh ginger and peeled squeezed orange zest.
