2 1/2 cups chopped orange rind
1 tablespoon cold white vinegar
1 cup water
1 (6 ounce) can fruit preserves
1 tablespoon vegetable oil
1 tablespoon maple syrup
1 tablespoon orange juice
1 teaspoon lemon juice
1 teaspoon lemon zest
1 teaspoon ground allspice
1 teaspoon ground turmeric
Place orange rind in a clean glass dish or plastic container and shake briefly. Add vinegar, water and fruit preserves, oil and maple syrup, orange juice, lemon juice and lemon zest, stirring well. Pour mixture over orange peel in pan of oven or on rack of microwave-proof metal broiler pan.
Broil for 30 minutes, turning oven and pan every few minutes. Broil an additional 4 minutes on each side, or until caramel color begins to turn golden brown.
