2 sweet potatoes, peeled and seeded
1 cup hot water
2 tablespoons lemon juice
1 cup chopped onion
1 cup diced celery
1 cup diced tomatoes
8 ounces shredded Cheddar cheese
Place sweet potatoes, hot water, lemon juice and onion in a large saucepan. Bring over medium heat until potatoes are cooked but pink. Stir in celery, tomato and cheese, and let simmer.
