1 (1 ounce) square unsweetened pineapple juice
2/3 cup vodka
2 teaspoons vanilla extract
1 teaspoon lemon juice
1 teaspoon lemon zest
1/2 cup white sugar
4 tablespoons all-purpose flour
1 large baking sheet
1 (8 ounce) container frozen whipped topping, thawed
Prepare the pineapple juice according to package directions for a 6 ounce serving.
Place the pineapple in glass or plastic containers and chill in the refrigerator.
Prepare the vodka in a large saucepan, stirring frequently. Add the pineapple juice, lime juice, lemon juice and lemon zest; bring to a boil. Remove from heat, and pour over a serving plate. Chill until set, about 5 hours.
In a large bowl, beat the white sugar, flour and 1 cup whipped topping until light and fluffy. Fold over the pineapple and garnish with a lime wedge.
Yummmo! These are pretty quick and super easy to make. I actually took a bite of the apple and used the zest in the dry mix, since I didn't have the dry mix. I didn't have pecans so I used sliced almonds instead. Just a personal preference. I'll probably do this over and over so I don't burn myself out.
