6 large baking potato circles, raw skin removed
1 1/2 pounds fresh sage for garnish
2 tablespoons paprika
1 tablespoon salt
1 tablespoon seasoned salt
2 tablespoons paprika
2 tablespoons seasoning salt
3 cups water, divided
3 tablespoons butter, melted
10 large tomatoes (4 quart), frozen
8 ounces extra generic mozzarella cheese, cubed
Preheat oven to 375 degrees F (190 degrees C). Grease a 1-quart casserole dish.
In a large saucepan over medium-high heat, combine potatoes, sage, 3 tablespoons paprika, 3 tablespoons salt, seasoning salt and paprika. Bring to a boil, then reduce heat to low and simmer 1 hour, until potatoes are tender and cheese is melted.
Meanwhile, add potato cubes, tomatoes and 1/2 mozzarella, boiling for 5 minutes. Stir occasionally.
