1/2 cup butter
1/3 cup packed brown sugar
1/2 cup lemon juice
1/3 cup vanilla extract
1 cup all-purpose flour
1 egg
1 teaspoon cinnamon
1 teaspoon baking soda
1 1/2 teaspoons lemon juice
1 cup chopped walnuts
4 cups rolled oats
In a large bowl, cream butter, brown sugar, lemon juice, and vanilla extract. Mix well and spread on the bottom of a 9x13 inch pan.
In a small bowl, combine flour, egg, cinnamon, baking soda, and lemon juice. Mix well and stir into the butter mixture. Spread mixture starting at the butter/brown sugar layer.
Bake in the preheated oven for 40 to 45 minutes, until lightly browned. Cool before cutting into squares.
