1 small onion, diced
1 cup dry black-eye peas
6 large fresh jalapeno peppers, seeded and minced
1/4 cup minced green onions
1/4 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Preheat oven to 350 degrees F (175 degrees C).
Heat oven to 400 degrees F (200 degrees C).
Place cooked onion in a large saucepan and cover with water. Bring water to a boil, and immediately remove from heat.
Place onion in a saucepan with enough water to reach the onion flesh. Stir in peas, jalapeno peppers, green onions and mozzarella cheese.
Place a layer of tomato in the bottom of a medium baking dish. Sprinkle with mozzarella cheese, top with crab meat. Seal edges and cut slit in the top. Spread sauce onto outside of dish. Cover with foil, and bake for 25 minutes in the preheated oven, or until bubbly.
