3/4 cup applesauce
2/3 cup butter, room temperature
3 eggs
1/2 cup light corn syrup
2/3 cup packed brown sugar
1/2 teaspoon salt
1/4 cup applesauce
2 teaspoons butter
1 teaspoon vanilla extract
Preheat oven to 375 degrees F (190 degrees C).
Beat together applesauce and butter. In a medium saucepan over medium heat, melt corn syrup, brown sugar, and salt. Stir in applesauce and 2 teaspoons butter. Cook until sugar is dissolved. Remove from heat and stir in vanilla and remaining 1/4 cup of butter. Using an electric mixer on medium speed, beat in eggs one at a time, beating well after each.
Fill a greased 9x13 inch baking pan with about 2/3 of the batter. Spread evenly in prepared baking pan.
Bake in the preheated oven for 8 to 10 minutes, until center is firm and golden. Let cool between fingers and let stand before cutting into squares.
