1 medium chicken, cut into small pieces
1 medium onion, peeled and minced
1 medium clove garlic, minced
1/2 cup olive oil
2 cups water
1 (2 ounce) can tomato paste
4 tablespoons chopped fresh parsley
1 (30 ounce) can whole kernel corn, drained
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh thyme
1 teaspoon salt
In a large saucepan, combine oil, water, tomato paste, parsley, corn, parsley, thyme, salt and chicken. Bring to a boil, stirring, and reduce heat. Cover, reduce heat, and simmer for 20 minutes. Reduce heat to low, cover, and simmer for 20 minutes more.
Remove chicken from marinade, place in small bowl, and serve. Cover, remove pan, and refrigerate. Serve with sauce or pasta.
