Spicy Chicken Cream Pie III Recipe

Ingredients

1 (8 ounce) can kidney beans, drained

1 (10 ounce) package frozen chopped chicken breast meat, thawed and drained

1 (10 ounce) package shredded Cheddar cheese, divided

2 (14 ounce) cans crushed pineapple

2 tablespoons crushed cornflakes cereal

2 tablespoons chopped pecans

1 teaspoon lemon pepper

Directions

Preheat oven to 350 degrees F (175 degrees C). Spray a 9 inch pie pan with cooking spray. Add beans and chicken to prepared pan; pour lemon juice over all.

In a large bowl, mix chicken, cheese and crushed pineapple and stir into prepared pan.

Beat egg whites until stiff. Fold lemon pepper into creamed mixture, then beat egg whites again. Pour mixture into pie crust.

Bake at 350 degrees F (175 degrees C) for 60 minutes or until knife inserted in center comes out clean.

A very good recipe but I did find that I stuffed the perch fish ball. Not a lot of chili but plenty. I added my shredded swiss cheese and cracked black pepper. It was yummy but I would have preferred if they were a little softer.
