1 cup milk
1/2 cup white sugar
1 cup all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 tablespoons butter, chilled and diced
1 (10 ounce) can crushed pineapple, with juice
1 (9 inch) package cream cheese, softened
1/4 cup dark rum
1/4 cup white sugar
1/4 cup all-purpose flour
1/4 teaspoon baking soda
2 tablespoons butter, softened
1 1/2 tablespoons lemon juice
1 (3 ounce) can crushed pineapple, with juice
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, beat egg yolks until light and fluffy. Stir in milk and sugar. Mix with an electric mixer or pastry creamers. Stir in flour, baking soda, salt, cinnamon, sugar, flour mixture, pineapple and cream cheese.
Bake in preheated oven for 45 minutes. Remove from oven and sprinkle with crushed pineapple and cream cheese.
