25 egg whites
2 tablespoons butter
1/2 teaspoon vanilla extract
8 cup all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1 cup chopped dates
1 cup Cheddar cheese
2 tablespoons lemon juice
1 cup white sugar
1/4 cup vegetable oil
2 tablespoons butter
1 egg, lightly beaten
1 cup milk
1 tablespoon orange juice
1/8 teaspoon vanilla extract
Preheat oven to 325 degrees F (165 degrees C). Grease 10 muffin cups or line with paper muffin liners.
In a large bowl, beat egg whites with butter. Beat in vanilla extract, flour, baking powder, salt and dates. Stir in cheese, lemon juice and sugar until well blended. Fold in oil and butter. Press muffins into the greased paper liners.
Bake in preheated oven until toothpick inserted in center comes out clean, about 1 hour.
