1/2 cup butter, softened
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 1/2 cups all-purpose flour
3 tablespoons all-purpose flour
1/4 teaspoon baking powder
1/8 teaspoon salt
1 cup chopped oranges
1 cup chopped raisins
1 cup softened shortening or margarine
Preheat the oven to 375 degrees F (190 degrees C).
In a medium bowl, cream together the butter and brown sugar until smooth. Stir in the egg and 1 cup flour until well blended. Stir in the flour, baking powder and salt. Mix in the sugar mixture and orange juice. Drop lightly onto ungreased cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheets for 5 minutes before removing to a wire rack to cool completely.
