1/2 cup margarine
1/2 cup milk
1 (8 ounce) package cream cheese, softened
1 bunch fresh strawberries
3 eggs
1 teaspoon lemon extract
2 maraschino cherries, garnish
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or line with paper muffin liners.
Melt margarine in a saucepan over medium heat. Stir in milk and cream cheese until smooth; remove from heat. Mix strawberries, eggs, lemon extract and cherries into margarine mixture to form a smooth ice cream shape.
Place cookies on ungreased cookie sheets. Bake for 8 to 10 minutes in the preheated oven, stirring when the edges begin to brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
