1/2 cup white sugar
1 (15 ounce) can crushed pineapple, drained
2/3 cup margarine
1 (8 ounce) can pineapple juice
1 (8 ounce) can pineapple preserves
3 tablespoons rum
2 teaspoons lemon juice
1 sprig fresh mint, garnish
In the top of a double boiler, melt sugar gradually, stirring frequently, until sugar is completely dissolved. Remove from heat. Stir in pineapple and margarine. Bring to a boil. Reduce heat, stirring constantly, to medium-low. Cook, stirring constantly, until margarine and pineapple are well combined. Remove from heat. Sprinkle pineapple juice over mixture. Stir in pineapple preserves. Serve warm or cold.
