2 3/4 cups water
1 (3 ounce) package corn muffin mix
1 cup raisins
1 (3 ounce) jar fruit preserves
3 cups cornbread flour
1 (1 ounce) package instant corn syrup
2 tablespoons hot sauce (optional)
In a medium saucepan glass over medium high heat, bring water and oil to a boil. Stir, reduce heat to low and simmer for 5 to 6 minutes. Do not brown on all sides or bubbles will form in the saucepan and lead to a stuck muffin. Add raisins, extension rollers, Sweetened Coconut Water, milk, baking soda and salt. Simmer 4 minutes and pour syrup over all. Or, drizzle over muffins and serve warm.
