5 pounds fresh kale, thinly sliced and flaked
1 pound lean ground beef
1 tablespoon salt
1 tablespoon seasoning salt
1 tablespoon dried basil
1 tablespoon dried parsley
1/4 cup granular, low-fat instant desiccated cheese
2 tablespoons mayonnaise
Preheat oven to 425 degrees F (220 degrees C). Lightly grease a 4 quart dish.
Heat the oil in a large skillet over medium heat. Add the kale and saute until tender, 5 to 10 minutes. Meanwhile, in a medium saucepan over medium heat, brown the inside of the meat with the seasoning salt and garlic. Stir in parsley and basil, set aside.
Arrange cheese in a small bowl and pour boiling water over it. Saute for 2 to 3 minutes. Transfer to the prepared dish.
Add as many desiccated cheeses as you like and pour remaining 1 cup of water over meat mixture (beef is best). Add vinegar and salt and continue to cook for 2 to 3 minutes, stirring occasionally. Serve hot.
