2 (18.25 ounce) packages white cake mix
1 (3.4 ounce) package instant banana pudding mix
1/4 cup water
1/2 cup white sugar
1/2 cup white vinegar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
3 eggs
2 cups water
1 (17.9 ounce) can frozen peach slices, thawed and drained
1 teaspoon vanilla extract
Preheat oven to 350 degrees F. Grease and flour 2 (8 inch) pans.
In a large bowl, combine the cake mix, pudding mix, water, and sugar. Beat together until blended. Stir in berries, cinnamon, and vanilla. Pour batter into prepared pan.
Bake in preheated oven for 45 to 55 minutes, until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
To make the Frosting: In a large bowl, beat together eggs and 2 cups water. In a medium whisk, beat together the flour, cinnamon, and vanilla. Beat in the thawed dried fruit. Repeat with remaining ingredients. Press into the prepared pan.
To assemble, arrange cake layers in an even order, using parchment paper as a guide. Press 1 layer into the prepared pan while still in the middle.
