Banana Bread II Recipe

Ingredients

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/8 teaspoon salt

1 1/2 teaspoons white sugar

1 cup milk

1 teaspoon vanilla extract

1/2 teaspoon hot water

1 egg

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/2 cup banana puree

1 (18 ounce) package orange banana cake mix

Directions

Preheat oven to 400 degrees F (200 degrees C). Grease and flour two 9x5 inch loaf pan pans.

In a large bowl, sift together the flour, baking soda and salt. Set aside.

In a large bowl, cream together the sugar, milk, flour, baking soda and salt. Beat well. Stir in the flour mixture. Fold in the egg, lemon juice, and vanilla. Stir in the banana pulp, banana puree, and banana pudding mix. Drop batter by the inch onto the prepared pan.

Bake in preheated oven for 30 minutes, or until a toothpick inserted into the center of the bread comes out clean. Remove and lay pan on a wire rack to cool completely. Cool slightly, then slice into squares using a glass or metal cutter.

I opted for fresh cilantro leaves and chopped basil over the basil, went ultra-Chile-friendly and took half the chipotle Chile sauce and used under the sink instead of dish. Came out pretty crusty. Impressive recipe.
