Chocolate Cookie Bars Recipe

Ingredients

2 cups all-purpose flour

1/2 cup white sugar

1/2 teaspoon salt

1/2 teaspoon baking soda

1/2 cup butter

1 cup chopped pecans

1 cup flaked coconut

1 cup brown sugar

2 eggs

1/2 cup packed brown sugar

1/2 teaspoon vanilla extract

1/2 cup shortening/buttermilk

1 cup confectioners' sugar

1/4 cup brown sugar

1/2 cup chopped pecans

Directions

Preheat oven to 350 degrees F (175 degrees C). In a large bowl, combine flour, shortening, 1 cup of coconut and 1 cup of brown sugar. Stir well to combine. Beat in eggs one at a time, then stir in the brown sugar mixture. Stir in vanilla extract and extra coconut, 1 cup at a time, beating until well mixed.

Divide dough into two or three even portions and form into patties. Wrap in plastic and refrigerate for at least an hour. But no longer than two hours (they are good to crisp up when frozen).

Taste the bars one after another; taste as best before baking.

AWESOME! This is the first time I have made a disco ball sandwich. I will make this again and will try and avoideto make sure it is safe to eat. It is super quick and easy to make. It takes about 20 minutes to cook. I think next time I will try adding garlic powder to see if it improves the taste.
