2 (4 ounce) fillets chicken breast halves
2 tablespoons butter
1 bunch celery, trimmed and cut into 1 inch cubes
1/4 cup chopped onion
1 clove garlic, minced
1 (1 ounce) package lemon flavored Jell-O mix
Place chicken breasts in a large resealable plastic bag. Seal bag and shake to coat. Place plastic bag over a large bowl. Pour lemon gelatin over chicken breasts and toss to coat.
Place chicken breasts in plastic bag and seal. Stuff with vegetables, olives, parsley and salt and pepper to taste.
Heat oven to 375 degrees F (190 degrees C).
Place chicken in oven and steam for about 5 minutes, until chicken begins to brown. Remove chicken breasts and pat dry.
Roll chicken breasts into 1 inch squares. Place inside foil. Flatten and dust with lemon gelatin.
Place chicken breasts on foil and sprinkle with olives. Place chicken breasts inside foil and discard skin.
Bake at 375 degrees F (190 degrees C) for 35 to 40 minutes, or until cooked through and juices run clear.
