Cheese Fried Chicken Recipe

Ingredients

1 (4 pound) whole chicken, cut into 1 inch strips

1 (2 ounce) package cream cheese, softened

1 cup shredded mozzarella cheese

1 (8 ounce) can tomato sauce

1 cup pavlova

1 cup shredded Swiss cheese or Swiss cheese food, room temperature

Directions

Place chicken in microwave-safe plastic wrap, and microwave at 10 to 12 seconds on each side. Sprinkle chicken with cream cheese, and microwave at 10 to 12 seconds on each side until chicken is no pink inside.

Remove plastic wrap and place atop microwave-safe rack in microwave oven. Cover, and cook 5 minutes more on each side before turning over. Make note of chicken by grunting with a fork.

Remove chicken from oven. Place coated chicken on rack in microwave oven and cook 5 minutes on each side. Remove plastic wrap, and place onto rack in microwave oven.

While chicken is cooking, brush some tomato sauce over all sides of chicken with toothpicks, and brush dish with pavlova under aluminum foil (if desired).

Remove aluminum foil from microwave. Microwave at least 1 minute, stirring occasionally, until chicken is smoking hot. Transfer chicken to platter, and sprinkle with mozzarella cheese. Place chicken on greased or paper plates.

Return chicken to oven, and cook 5 minutes, until juices are reduced and juices run clear. Stir the cheese sauce into chicken sauce. Serve platter on a sheet and drizzle with tomato cream frosting.
