4 eggs
1 (3 ounce) can cream cheese, softened
2 (3 ounce) packages cream cheese and onion flavored Jell-O mix
1 tablespoon vegetable oil
2 tablespoons lemon juice
1/2 teaspoon lemon rind
Preheat oven to 350 degrees F (175 degrees C).
Place eggs in a large bowl and pour water into a small heaping tablespoon. Beat, then whisk in cream cheese and cream cheese and onion flavored gelatin mix. Align eggs according to package directions.
Pour oil and lemon juice into the bottom of a 10x15 inch casserole dish.
Spread eggs and cream cheese mixture onto the prepared cookie sheet.
Bake at 350 degrees F (175 degrees C) for 25 minutes.
Bake at 350 degrees F (175 degrees C) for 15 to 20 minutes at the same temperature.
I absolutely love Greek yogurt and absolutely lost a customer due to this. I ordered three Greek yogurts and one container of plain old plain old yogurt. Upon closer inspection, I discovered that the pecans came as complete circles--perfect! If I made these again, I'd double the peanut oil and reduce the flour to a bare minimum. The mixture is absolutely delicious and wonderfully versatile.
