1/2 medium potato, peeled and cubed
1/4 cup canola oil
1/8 teaspoon salt
1 tablespoon allspice
1 teaspoon dried oregano
3/4 cup chopped onion
2 tablespoons olive oil
Place potatoes into a large saucepan with water to cover. Bring to a boil and boil, stirring occasionally, for about 10 minutes. Remove from heat and stir in oil, salt, oregano and onion. Bring to a gentle simmer over medium heat. Simmer 30 minutes, stirring often, until potatoes are tender.
Stir corn/yellow corn into potatoes. Mix in tomatoes, onion and olive oil; cook briefly.
