2 (3 ounce) packages cream cheese, softened
1 (10 ounce) package frozen chopped spinach
1 cup white sugar
1 3/4 cups milk
1 1/2 cups shredded coconut
1 egg, lightly beaten
1 tablespoon vanilla extract
12 scoops vanilla ice cream
Melt cream cheese in large microwave oven (Microwave for 7 to 8 minutes or until the cheese is melted). Mix in chopped spinach and sugar, then microwave for 1 minute or until spinach is wilted. Stir in milk, sugar and coconut. Cover and microwave for 1 minute or until mixture thickens. Stir in egg and vanilla extract; microwave for 2 minutes or until egg is transparent and cream is thick. Stir in whipped cream and ice cream. Spoon mixture into pastry bags. Wrap tightly in plastic and chill until firm. Cut into sections to serve.
