2/3 cup all-purpose flour
1/4 teaspoon salt
1 cup sugar
2/3 cup quick-cooking or canned instant smooth mix
2 cups milk
1/2 cup buttermilk
2 eggs
1/4 cup buttermilk
1/4 teaspoon ground cinnamon
1 teaspoon ground nutmeg
Preheat oven to 400 degrees F (200 degrees C). Grease and flour an 8x8 inch baking pan.
In a large bowl, stir together flour, salt, sugar and instant mix. Stir in milk and buttermilk. Beat until smooth and creamy. Spoon half of the mixture into the prepared pan. Layer half of the fruit layer over the total. Beat in buttermilk, cinnamon and nutmeg.
Bake in preheated oven for 40 minutes, until a toothpick inserted comes out clean. Cool in pan on wire rack.
