Grandpa's Jammies Recipe

Ingredients

1 cup butter

2 tablespoons brown sugar

1/3 cup margarine

2 tablespoons unsweetened cocoa powder

1 tablespoon warm water (110 degrees F/45 degrees C)

2 tablespoons lemon juice

1 cup milk

1 cup water

2 tablespoons margarine

1 cup white sugar

3 tablespoons lemon juice

2 tablespoons lemon zest

1 cup rolled oats

2 tablespoons butter

1 cup butter

1 cup brown sugar

1 cup milk

1 cup water

1 teaspoon vanilla extract

1 cup whole wheat flour

1 egg

1 teaspoon baking soda

1 (15 ounce) can pinto beans, drained and rinsed

1 (12 fluid ounce) can or bottle lemon-lime flavored carbonated beverage

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.

In a large bowl, cream together the butter, brown sugar and margarine. Stir in the cocoa, water and lemon juice. Beat until smooth. Fold in the milk, water and margarine. Mix into the creamed mixture until well blended. Stir in the flour, eggs, lemon zest and oats.

Pour batter into prepared pan. Bake in the preheated oven for 55 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

To make the fruit topping: In a small bowl, mix 1/3 cup margarine, 1 cup white sugar and 1 cup milk. Stir until smooth. Place the sugar mixture in the bottom of any large bowl. Mix together the lemon juice and lemon zest. Place the pinto beans over the fruit topping, cover bowl with waxed paper and refrigerate overnight.

While the cake is cooling, place the remaining custard in a large bowl. Combine the butter mixture with the brown sugar mixture, stir to mix until smooth. Fold in the lemon juice and lemon zest until all ingredients are used. Spread this over the cooled cake. Cover with waxed paper and refrigerate overnight.

After the cake has cooled, turn out onto a waxed paper lined cake pan and place an upside down sandwich of waxed paper on it. Place the cake on waxed paper and layer with the cream cheese mixture and fruit topping. Seal edges of the waxed paper to keep the edges from drying out. Transfer the waxed paper to a waxed paper lined baking sheet.

Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool, slice as desired and serve at room temperature.
