Apple and Banana Nut Cookies Recipe

Ingredients

2 cups brown sugar

1/2 cup butter

1/2 cup white sugar

1/4 cup eggs

1 teaspoon vanilla extract

1/3 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

3/4 cup chopped walnuts

1/2 cup chopped banana

1 cup chopped walnuts

Directions

Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.

In a large bowl, cream together the brown sugar, butter, white sugar and eggs until smooth. Beat in the vanilla extract and flour. Combine the brown sugar mixture, eggs, flour mixture and baking powder; beat until well blended. Stir in the walnuts and banana. Drop by rounded spoonfuls onto the prepared cookie sheets.

Bake for 12 to 15 minutes in the preheated oven, or until the cookies are light brown in the centers. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

I added garlic powder and/or taco shells to this recipe, but changed proportions of several ingredients. I had black beans and used two jalapenos per cup. I do not like chipotle so I selected a milder variation (thanks for the heads up: this recipe is a snug fit for my busy grill.) I also used dried minced onion. I used 1 tsp of salt, 1/2 tsp of dried pepper, and 1/2 tsp of garlic powder. I'll be making this again.
