8 eggs
2 ounces lemon juice
1 cup lemon-lime flavored Jell-O
1/2 cup vegetable oil
1 cup white sugar
1 1/2 teaspoons lemon zest
Beat eggs, lemon juice, lemon zest and lemon zest in large bowl. Stir until well blended. Fold egg mixture into lemon-lime gelatin (gelatin that holds double the volume of a spring roll) mixture. Shape into a log. Roll in lemon zest.
