1 recipe pastry for a 9 inch double crust pie
3 egg whites
1 (1 ounce) package cream cheese, softened
1 cup white sugar
4 tablespoons butter
1 teaspoon vanilla extract
1/2 cup peanut butter
1/2 cup confectioners' sugar for dusting
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round pans. Mix together the egg whites and cream cheese until they are nearly completely set. Divide the mixture between the two pans.
In a small bowl, mix together the sugar, butter and vanilla until smooth. Beat in the peanut butter, confectioners' sugar and vanilla. Spread the mixture on top of each pie.
Bake at 350 degrees F (175 degrees C) for 50 minutes, or until toothpick inserted in center comes out clean. Allow to cool completely before cutting into squares.
