1 (11 ounce) package frozen mixed vegetables
1 tablespoon vegetable oil
1 small onion, chopped
3 stalks celery, chopped
2 tablespoons vinegar
2 tablespoons white sugar
1/2 teaspoon salt
2 eggs, beaten
1 cup milk
1 teaspoon ground nutmeg
1 tablespoon grated lemon zest
8 ounces cream cheese, sliced
1 teaspoon lemon extract
1/2 cup heavy cream
In a large bowl, mix vegetables, oil, onion, celery, vinegar, sugar, salt, eggs, milk, nutmeg, grated lemon zest, cream cheese, lemon extract and egg. Blend well and refrigerate for 24 hours before serving.
