1 cup lemon juice
1 cup water
1 (1 ounce) package lemon flavored Jell-O mix
2 eggs, beaten
1 cup chopped onion
1 teaspoon lemon zest
1 teaspoon lemon juice
1 cup lemon sherbet
1 cup water
1 (10 ounce) can crushed pineapple with juice
1 pint lemon sherbet, chilled
1 (4 ounce) can sliced fresh strawberries with fruit
In a large bowl, mix lemon juice, water and lemon gelatin. Stir in eggs and lemon zest. Add lemon sherbet and pineapple with juice, and mix until smooth.
Heat oven to 350 degrees F (175 degrees C).
Pour mixture into a 10 inch square pan or other large baking dish. Bake at 350 degrees F (175 degrees C) for 30 minutes.
