Valles de Polenta Recipe

Ingredients

1 pound medium-grain white bread

1 cup heavy cream

1/2 small green bell pepper

1/2 small onion, chopped

8 ounces cooked and mashed potatoes, chopped

1/2 teaspoon salt

3 cups water

Directions

Preheat oven to 350 degrees F (175 degrees C). Prepare pastry according to package directions for a 9x13 inch pan; pour into prepared pan.

Bake 50 minutes in the preheated oven; turn and bake for an additional 45 minutes.

In a large bowl, combine corn, potatoes, salt and water. Season with 1/2 teaspoon of vinegar; pour over potatoes.
