1 cup butter
1/2 cup all-purpose flour
2 cups granulated sugar
2 teaspoons vanilla extract
4 eggs
1 cup sliced fresh strawberries
1 cup butter flavored shortening
1 cup white sugar for decoration
2 teaspoons milk
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (8 ounce) packages of muffin liners or cupcake pans.
Sift together the butter, corn syrup, powdered sugar and vanilla extract. Make a well in the center of the mixture, pour in the flour, eggs and strawberries. Set a 1 1 ounce scoop of cookie dough in the center of each muffin. Sprinkle with 1 tablespoon remaining sugar.
Bake for 25 to 30 minutes in the preheated oven, until a toothpick inserted into the center of the muffin comes out clean. Allow to cool. Cool completely in pan before removing from pan.
