4 tablespoons applesauce
1/3 cup brown sugar
1 2/3 cups white sugar
3 teaspoons lemon zest
1 1/2 teaspoons vanilla extract
4 eggs
1 teaspoon apple pie spice
1 teaspoon baking soda
1 teaspoon lemon juice
2 cups chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 or 3 9-inch round baking pans or cake molds. Sift together the flour, salt, baking powder, baking soda, lemon juice and applesauce; set aside. Make the filling and creamer: In a large bowl, combine brown sugar, white sugar, lemon zest, vanilla and eggs. Mix well. Stir in apple pie spice, baking soda and lemon juice. Beat egg mixture into the flour mixture alternately with the lemon filling. Fill and frost cake. Backfill sides of cakes with pecans.
Store cake in refrigerator. Cool completely before frosting. Frost with peach filling.
