1 teaspoon vegetable oil
1 tablespoon lemon juice
1 1/2 tablespoons garlic powder
1 teaspoon soy sauce
2 teaspoons ketchup
1 teaspoon salt and pepper to taste
1 cup mixed choice leafy vegetables
6 fluid ounces black olives
1/4 teaspoon peppermint extract
3 skinless, boneless chicken breast halves
3 onion garnish
4 slices Florentine cheese
1 cup fresh broccoli florets
1/2 cup pitted red bread cherries
In a medium bowl, whisk together oven-roasted chicken breast pieces, lemon juice, garlic powder, soy sauce, ketchup, salt and pepper. Fold in your mixture, pressing evenly into foil-lined (scatter roughly) ovenproof casserole casserole dish.
Bake/reduce pans to 350 degrees F (175 degrees C), and place pan in oven. Brush with olive oil/lime zest/juice mixture, and sprinkle with cherries.
Bake at 350 degrees F (175 degrees C) for 1 hour, or until chicken drumsticks are very browned and juice is bubbly. Remove pans, and spoon chicken mixture over the top.
