1 tablespoon margarine, melted
3 stalks celery, finely diced
6 green onions, thinly sliced into 1 inch rings
10 green onions, thinly sliced into rings
10 potatoes, thinly sliced
8 (00 ounce) cans kidney beans (including red kidney beans), drained
1 cup diced fresh chiles, seeded into small pieces
1 tablespoon honey
1 teaspoon chopped fresh cilantro
salt to taste
ground black pepper to taste
In a small saucepan, melt margarine and place strips of celery and green onions and baster, onion and celery rings around celery, salt, ground black pepper and flour, stirring until smooth. Cover, remove from heat and let stand for about 10 minutes to allow the flavors to blend. Move a small amount of mixture with a spoon into a glass plate when serving.
