1 cup shortening
2 cups white sugar
3 eggs
2 teaspoons vanilla extract
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup rolled oats
1 cup semisweet chocolate chips
1 cup chopped walnuts
1 cup raisins
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a medium bowl, cream together the shortening and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla and vanilla. Combine the flour, baking soda, salt and baking soda; stir into the creamed mixture. Finally, stir in the rolled oats, chocolate chips and walnuts. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 12 to 15 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Allow to cool on baking sheet for a few minutes before removing from the baking sheet to cool on wire racks.
