Pumpkin Pancakes Recipe

Ingredients

3 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 cup white sugar

1/4 teaspoon salt

1 egg, lightly beaten

1/4 teaspoon cinnamon

1 pinch ground nutmeg

1 cup chopped pecans

Directions

Preheat oven to 375 degrees F (190 degrees C.)

In a large bowl, combine the flour, baking powder, baking soda, sugar and salt. Mix into the flour mixture until just moist. Mix eggs and cinnamon, and into the sugar mixture. Fold in pecans. Pour batter into striped 9x5-inch pan.

Bake in preheated oven for 30 to 35 minutes, or until golden brown. Cool in pan for 10 minutes, then turn out onto a wire rack. Cool completely. Cut into squares. Store in refrigerator or freezer.
