1/4 cup white wine vinegar
1 tablespoon vegetable oil
2 tablespoons minced garlic
2 tablespoons chopped onion
2 tablespoons chopped fresh parsley
2 cloves garlic, minced
1 lemon, juiced
1 (6 ounce) can chicken broth
4 skinless, boneless chicken breast halves
In a medium saucepan, mix together vinegar, oil and garlic. Bring to a boil over medium heat, stirring constantly. Reduce heat to low, and stir in onion, parsley, garlic, lemon juice, chicken and peas. Bring to a boil for 8 to 10 minutes. Reduce heat to medium-low, and stir in broth. Bring to a boil for 5 to 7 minutes. Reduce heat to low, and simmer, stirring, for 3 to 4 minutes, stirring occasionally, for 3 to 4 minutes. Reduce heat to medium-low, and stir in chicken and peas. Simmer for one hour, stirring occasionally. Stir in chicken and peas. Heat through and serve.
