1 large shrimp, peeled and deveined
1 cup minced onion
1/2 cup sliced tomatoes
1/4 cup chopped green bell pepper
2 tablespoons minced dill
2 tablespoons minced fresh parsley
1/4 teaspoon salt
1 tablespoon diatomaceous earth
1 teaspoon dried oregano
4 pita breads depending on size
Preheat oven to 350 degrees F (175 degrees C).
Place pita on a flat surface. Place pan on oven rack and spray with nonstick cooking spray. Remove cover and brush with cooking spray. Place wrapped pita on oven rack in large bowl and brush with cooking spray. Place in preheated oven for approx. 25 to 35 minutes, or until shrimp turn golden brown. Tip: Spray little pita pockets with cooking spray.
While pita browns shrimp, toss in tomatoes and green pepper. Cook over medium heat until peppers are hot, about 5 minutes. Mix in the dill, parsley, salt, oregano and mushrooms. Stir well.
Sprinkle shrimp with crushed cheese and spread pita over pan. Top with shredded cheese and top with tomatoes.
Bake uncovered for 40 minutes, removing pita when cool. When sandwiching the pita over the shrimp, sprinkle with remaining tomatoes and pita.
Tasted just like a tropical seafood taco. Love the shrimp. This dish is so versatile and easy to make. I also pierced the pork chops for added flavor.
