6 skinless, boneless chicken breast halves
1/2 cup butter or margarine, melted, divided
1 (16 ounce) package candied cherries
1 cup water
5 tablespoons brown sugar
1/2 teaspoon lemon juice
3 teaspoons cornstarch
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Place chicken, mixing well, in prepared pan. Sprinkle cherries evenly over top of chicken. Pour water in pan and heat to cover.
Place cherries over chicken and pour in brown sugar, lemon juice, cornstarch, soda, salt, cinnamon and nutmeg. Mix well and heat to boiling. Reduce heat to low and simmer 5 to 7 minutes.
Crush chicken with 6 forks, turning once, to prevent sticking. Cook for 5 minutes at a time. Drizzle lightly with candied cherries syrup. Remove chicken from pan. Place pan on rack in oven. Heat to 375 degrees F (190 degrees C).
Remove chicken from oven. Remove chicken from oven and brush with melted butter. Place oven rack on broiler rack. Remove chicken from oven and brush with melted butter and brown sugar syrup. Place rack on broiler rack and broil for 2 minutes. Place chicken on rack after 2 minutes of broil.
Bake at 375 degrees F (190 degrees C) for 30 minutes or until chicken is cooked through.
