1 (8 ounce) package frozen mixed vegetables, thawed
4 slices bacon
1 onion, diced
sour cream to taste
1 tablespoon apple cider vinegar
1 cup sterile water
PREPARE mixed vegetables (such as mixed greens, greens and kidney beans) and bacon in large saucepan over low heat; Place bacon in pan. Cook over medium heat; Reduce temperature to medium-low. Continue cooking, stirring occasionally, for about 10 to 15 minutes or until bacon is crisp; Remove from heat. Cool; stir in onions and sour cream. Stir together the vinegar and water; Cover pot and simmer, stirring occasionally, for about 5 minutes or until all ingredients are well mixed.
PLACE mixed onions, onion, vinegar and water in large saucepan over low heat. Bring to a boil and reduce heat to low. Cook, stirring occasionally, for about 5 minutes or until vegetables are tender. Remove from heat; stir in mix of peas, carrots and green beans. Reduce heat to medium-low; stir in cooked mixed vegetables and bacon. Simmer for 2 minutes or until heat has reduced or "grayed out" of broth.
