Nadel's Golden Raisin Bread Recipe

Ingredients

1/2 cup sugar

2 tablespoons lemon juice

3 eggs

2 cups raisins

2 teaspoons baking soda

4 cups bread flour

1 teaspoon salt

6 tablespoons butter

1 cup butter, melted

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, mix sugar, lemon juice, eggs, raisins, baking soda and 4 cups deodorized flour. Slowly mix in the melted butter and butter using the stand mixer. Mix until just moist. Spread into a 9x5 inch loaf pan.

Bake in preheated oven for 60 minutes, or until a toothpick inserted into center of the loaf comes out clean. Allow to cool on a metal rack. Slice loaf into 6 slices and bake another 10 minutes. Remove bread from oven and sprinkle with confectioners' sugar. Cool completely.
