2 tablespoons olive oil
1 large onion, chopped
1 medium head garlic, chopped
1 cup all-purpose flour
8 ounces sharp processed cheese
Heat 1 tablespoon olive oil in heavy skillet over medium heat. Sprinkle onion over your food and cook until browned. Stir garlic into pan and cook with a brush until slightly golden. Stir in flour, stirring constantly, until all of the flour is coated.
In a medium bowl, beat chive mixture with an electric mixer until thick. Fold chicken into mixture. Place 1 cup cheese into center of each chicken breast, seam side down. Sprinkle top with 1/4 cup olive oil mixture.
Bake uncovered in center of oven for 30 minutes, or until chicken is cooked through.
