3 (8 ounce) package cream cheese, softened
3 tablespoons butter, softened
3 eggs
2 tablespoons flour
2 teaspoons dried minced onion
1 cup crushed Swiss cheese
2 tablespoons grated Parmesan cheese
1 (7 ounce) can fat-free Italian-style dressing
1 (2.5 ounce) can cottage cheese
1 (2 ounce) can grated Parmesan cheese
1 tablespoon caramelized onions
To Make Goat Cheese Crust: Melt 3 tablespoons butter in a large bowl. Stir cream cheese and butter into butter, mixing until well combined. Stir in the eggs, flour, onion and cheese.
To Make Goat Cheese Dressings: Melt 3 tablespoons butter in a small bowl. Using a 2-1-piece round cutter or fork, cut 1/4-to-1/2-inch slices of Swiss cheese from each piece.
Preheat oven to 350 degrees F (175 degrees C). Season a 9x13 inch baking dish with salt and pepper.
To Make Goat Cheese Monterey: Melt 3 tablespoons butter in a medium saucepan. Place 2 tablespoons cheese pieces in pan. Gently pour over cream cheese mixture, stirring constantly.
Bake at 350 degrees F (175 degrees C) for 1 hour. Slice into 1/4-inch slices.
