1 recipe pastry for a 9 inch double crust pie
1 1/2 tablespoons butter, divided
1/2 teaspoon apple pie spice
4 tablespoons packed brown sugar
1 (9 inch) prepared mini graham cracker crust
1 cup sliced cherry
Preheat oven to 400 degrees F (200 degrees C).
In a mixing bowl, cream together the butter and apple pie spice. Beat in brown sugar and 1/2 cup brown sugar in a separate mixing bowl. Mix in the pie crust. Divide pie filling between two pie crusts, filling each 3/4 to 4/2 full. Fill cracker-size turns down.
Bake in preheated oven for 25 minutes or until toothpick inserted near center comes out clean.
Remove from oven, and immediately press slice on the pie crust. Remove pie from oven, allow to cool completely, and serve hot.
