1 cup butter or margarine
1 cup white sugar
1 teaspoon Dijon mustard
1 1/2 teaspoons lemon juice
1 1/2 teaspoons cornstarch
1 1/2 teaspoons evaporated milk
1 1/4 cups milk for chicken
1 cup peaches - pitted, peeled and sliced
Preheat oven to 400 degrees F (200 degrees C).
Chop butter and sugar. In a medium bowl, cream together butter and sugar until smooth. Stir in lemon juice, cornstarch, lemon juice and cornstarch. Blend into creamed mixture.
In a medium bowl, mix the peach slices and milk. Mix well.
Spread a thin layer of butter mixture over each chicken breast. Place chicken breasts on the baking sheet and brush with remaining lemon currants. Cover and refrigerate overnight.
Bake at 400 degrees F (200 degrees C) for about 1 1 hour, turning breast once during cooking.
